Curious to know if it's viable to target 2 crops, IE Manuka then bush. Are many doing this, and if so is it worth the extra logistics?

its fairly normal.
some aeras you don't have to move the hives and you will get 2-3 different crops. others are more mono aeras so you have to move hives. coromandel you have tutin issues to contend with. if its viable or not depends on if you think there will be enough flow to pay for the extra cost.
logistics all depends on your setup and how far you need to go.
