I think bees like honey ...

On Friday I took off 3 boxes of honey from 4 hives in an apiary (Hans) on the shoulder of Harbour Cone, and it is startlingly good:

 

fragrant and tastes great, we can identify elderflower, kanuka and brambles

nice after taste

balanced with no excess of sweetness or acidity

good mouth feel

and some bits of wax and pollen present because it's strained, not filtered.

 

My mentor, Shaun, joined me for lunch, and we sat in the sun and enjoyed the honey on my "mistake bread", as did Fiona who joined us. He calls it the best honey he has ever tasted, and it will be called "Premium Reserve".

 

Then Fiona called for reinforcements, so we quietly moved inside.

 

So, it's going to be small crop, but a joy to have this lovely, real honey.

I have picked up a cold wet bee off a concrete drive, it barely moved, put it into a jar and fed it some honey. Was amazing to watch her sucking it up and slowly comming back to life. She soon dried her wings and hairs out. She became quite stroppy and though it was still raining I had to let her go.
